How to find mapping polynomial fucntion of 2 variable function

Hi!

Say I have 2 sets of data points:

(x,y)

(u,v)

Each set has about 100 points of data.

I wand to find mapping fucntion, f, that would map one set to the oher set:

(u,v) = f(x,y)

I can assume that the mapping fucntion is a polynumial fucntion.

What would be the best approach in matlab to achive it?
