Modify existing colormap ranges

Hello all. I'm using the colormap "jet" to show magnitude of a contour plot. Is there a way to manually adjust the range of the colormap?
More specifically, here is an image of the colormap:
Now instead of going from dark blue to dark red, I want to be able to go from dark blue to orange, or from turquose to dark red. Basically, is there an easy way to have control over this? Or if not, is there a simple method to re-create a colormap from scratch?

temp = jet(255);
stop_at_orange = temp(1:170,:);
colormap(stop_at_orange)
