Image noise estimation (image processing)

I was told to use brute force method, trying out different threshold value for all of my images. My prof say our eyes is the best machinary to use. so now how do i judge my images through my eyes to get the best image/least noise(the best threshold value)?

The best threshold is the one you think does the best job. Now, do you have a MATLAB question?

i am dealing with a project which is optical character recognition related actually :/ i did multiply of images. so which will be better comparing a clearer object or a clearer background?

I don't know what that means. Of course a clearer object on a clearer background is best. try to improve your image capture situation as much as you can, and then try to deal with what you have in software post-capture.
