Can the vertical exaggeration of geographic axes be reduced so plots don't warp as much as they do now?

I'm trying to plot on geographic axes because I don't have the mapping toolbox, but one frustrating aspect of them is that I can't adjust the aspect ratio or scaling of the latitude axis. is there a way to keep the scaling consistent (squash the top & bottom of the map) so plots don't warp as much as they do now?

If you don't have the Mapping Toolbox, I recommend using m_map.
Basically, you're asking to reinvent map projections, and that's a deep rabbit hole if you start heading down it... better to just use an existing toolbox.
