Assign variable to each country in a political map of the world

Hello,
Imagine there is a political map of the world (image). Each country has its color. I would like to assign variable to each country so that I will be able to change colors of each country(region) according to certain fact, e.g. population, area, average temperature, etc., to generate several maps.
