Function to construct an array such as pcolor constructs an image

For a project I have several matrices which, together, construct an image using pcolor(A,B,C).
The actual data is stored in C and the coordinates of the data are stored in A and B.
Is there a function/method to construct an array from these three matrices using bilinear interpolation (in the same fashion as pcolor constructs an image)?

Try using TriScatteredInterp().
