T = table(Gender,Smoker,Height,Weight);
Then the variable T's class is table.
If I make a new variable 'test'
test = [T.Height T.Weight]
class test
Is test's class is table or double?
I'm not sure about this. Code says class of 'test' is 'char'

You should use a different syntax:
class(test)
Your current syntax is equivalent to
class('test')
