Read about pcolor, surf.
[X,Y,Z] = peaks(50) ;
figure
surf(X,Y,Z)

pcolor(X,Y,Z)

@KSSV, I have been working with pcolor and imagesc and its quite familiar to me.
In case of imagesc, pcolor or surf,
X = Nx1
Y = Mx1
Z = NxM
However, the question here is somwhat different. Here Y is NxM. So could you please suggest something more.
