Is there a way to simulate a simulink model on host and change the value of the constant blocks or inputs at run-time by means of an appropriate GUI and to display the value assumed by outputs / test-points on the same GUI?

Hi Giuseppe,
You can create an app using the App Designer to modify the values of Simulink block parameters.
To know more about building apps using App Designer, you can refer to this documentation page: https://www.mathworks.com/help/matlab/app-designer.html
In the created app, using numeric "Edit Field" components and the "set_param" function, you can interactively modify Simulink block parameters. Have a look at the following MATLAB Answer for more details.
