Real time data processing

I have an array of real time data coming from lab streaimg layer in matlab . I want to process this data and the idea is to divide the data in chunks and then process but during processing period incoming data is lost as it is coming at 250fps, Is there any command or tool that can be used to get data in background while current data is being processed.
kindly help,
the data is being acquired by running a matlab script file
