can anyone please tell me; since chapters in a thesis needs description of technology details (as in textbook ), (further chapters are own applications and results out of the technology),then can the theory parts from the Mathworks documentation(users guide, getting started ), be used or taken for it?

The volunteers here are there to contribute to questions related to coding. For legal questions you would be better off to contact MathWorks Support team.

The answer is likely to depend on your jurisdiction. (I am not a lawyer, this is not legal advice)
In general, facts are not subject to copyright. However, the text might be. If it is possible to rephrase the text without changing the meaning, that tends to be an indication of copyright. Depending on the jurisdiction there might be exemptions which allow you to use it despite the copyright. In US law this is called 'fair use', and some other jurisdictions call it 'fair dealings'. Scientific non-profit work like a thesis tends to fall under such a provision.
You should contact support and mention more details about your proposed usage (and mention your jurisdiction). Alternatively, you could contact a lawyer. You may also ask your supervisor, who might be able to point you to the legal aid services of your school/university or country.
