I have two space dimensions, X,Y and time t, and the variable V.
- Can I make a video instead of a simple plot.

There are a number of tools in MATLAB for higher dimensional data, including animation, slice, and isosurface/ patch among others. I've put these three techniques into an app on the file exchange: http://www.mathworks.com/matlabcentral/fileexchange/41405-volumetric-data-explorer
