One routine to do that is in the File Exchange at http://www.mathworks.com/matlabcentral/fileexchange/8214-gray-image-to-color-image-conversion
There are multiple ways of doing what you are asking.
Image Analyst
Image Analyst 2016-1-31
Create a colormap, for example using one of the colormap functions like jet(), hsv(), winter(), hot(), lines(), etc. Then use ind2rgb()
cmap = hsv(256);
rgbImage = ind2rgb(grayImage, cmap);
