Apt way to plot a collection of 2D datasets?

Hi all,
I am processing images and am saving a (1xN) array of the mean computed image data such that if I plot a single dataset I yield a line plot (i.e. amplitude vs pixel #). However what I'd like to do it to put all the datasets side my side (as they are separated spatially) and do a nice colormap to show the differences between them.
I've had a look at surf etc. but these seem to be designed for functions not discrete data points. All the datasets are the same size so there's no problems there. Can anyone point me in the right direct as to how to approach this?
