By my understanding you want to set the Jet colormap instead of parula, so you can try using ‘colormap’ function and specify color to be Jet. Sample code:
>> A = imread('cameraman.tif');
>> B = imrotate(A,5,'bicubic','crop');
>> C = imfuse(A,B,'blend','Scaling','joint');
>> imshow(C)
>> colormap('jet');
