EVreferenceapplicationにはトランスミッションモデルが実装されていませんので、モーターとデフの間にトランスミッションを挿入することになります。これは、Powertrain Blockset(PTBS)のライブラリにトランスミッションのブロックが複数ありますのでご利用いただけます。
次に、そのトランスミッションのシフト段を決める制御器が別途必要になります。
お持ちであればそれを組み込んでください。お持ちでなければトランスミッションブロックが使われている別のExample（SiCiPtReferenceApplicationなど）の"Controllers"サブシステム内のTransmission Control Module (TCM)を流用するのが手っ取り早いと思います。
