There's difference between EditField and EditFieldLabel, also, properties are case sensitive.
Replace this in the first two callbacks. Typo in second - strcat.
ImportimportDocEditField.Value
In third, property Value should be uppercase.

undefined function 'doc2pdf' for input argument of type 'char'.
[status,message]=doc2pdf(docFile,pdfFile);

According to function description in FEX, character array is accepted as input argument.
Use fullfile to instead of strcat to construct a full filepath.

The message is correct, there is no property with that name for that class.
Property names are almost always mixed case or sometimes all lower case, but rarely all upper case.
There is no property matching "TEXT" in any combination of case. The text for that class is accessed by the property named Value
