Hello Mehdi,
in general, I use physics based approaches for modelling a diode as it is more computational efficient and actually easier than doing a fuzzy logic approach. However, if you really want to use fuzzy logic, you would use this toolbox:

Instead, use Simscape which already has models of diodes:
