Look into stackedplot, or tiledlayout.

If you are new to MATLAB, you may also benefit by going through MATLAB Onramp.

If you're dealing with many traces that have some kind of structure over time, you could try a waterfall plot. Another way to deal with many traces is to normalize their amplitudes to the tallest amp and plot them all on the same axes with a vertical offset.
