colormap including gray for out of range

so i use trisurf with a color vector to display a surface colored by a parameter within a known range.
what i need is the ability to apply a known color (e.g. gray) to out of range values. is there a way to
build a custom color map which does this?

You should be able to use colormapeditor to edit the current cmap or any of the presets.
