How to derive a three variables function from a data

Is it possible to derive a three-variables function from data?
I want to get a correlation with three variables from my data. I have y matrix [25*1] as my function, and each number of the matrix y depends on three variables x, z, and t. So I need to derive a function in which x, z, and t are the inputs and y is the output.
Any possible code or guideline would be appreciated.

Yes. See for example the Curve-Fitting Toolbox. You might also be able to take advantage of cftool
You will need to know the form of the expression that you are trying to find coefficients for.
