Modifying Cell data in GUI's (without GUIDE)

I am passing a structure(S) through my GUI and modifying one of the fields in a call back function that is a cell (S.Celldata). It seems to stick within the callback function, but reverts to the original S.Celldata when it leaves. How do I get it to stick?

When you change a variable in a callback, it is changed exactly there and nowhere else. But you can store the modified variables in the GUI's UserData or by guidata. This has been explained repeatedly in the forum, such that a search will be useful:
